Chocolate and hazelnut revival for a flat schmalzler

CustomisingscentingIntermediate

From thatshychef on the Snuffhouse forum, 2019

This brings an old schmalzler that has gone flat back to life with natural chocolate and hazelnut extracts and a splash of rum. Take a pinch first and note what's missing (chocolate, nuttiness, wood or molasses) and whether it's too dry.

Grain alcohol is highly flammable, and its vapour can catch light in a gas oven. Use an electric oven if you can, on its lowest setting, and keep a close eye on it.

Notes

Use natural extracts, not supermarket baking flavourings, which don't always smell the way they taste and can have a chemical edge. Avoid vanilla, which drowns a schmalzler's fermented character. Chocolate and hazelnut echo it.
